Serene Soul Baked Pasta Recipe

  • 2 cups of whole wheat pasta of your choice

Directions:

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a pan, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
  4. Stir in the diced tomatoes, spinach, oregano, basil, salt, and pepper. Let the mixture simmer for 5-7 minutes.
  5. Add the cooked pasta to the tomato sauce and toss to combine.
  6. Transfer the pasta mixture to the greased baking dish.
  7. Sprinkle Parmesan cheese over the top of the pasta.
  8. Cover the dish with foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh basil leaves before serving.
